Healthy Banana Carrot Bread
Who doesn’t love a good banana bread? Just when you think you can eat all the bananas you brought home fromt he store before they start turning brown, you realize you can’t and what else is there left to do than bake those babies up! Rather than letting them go to waste, get out your mixing bowl and wooden spoon and whip this healthy alternative to the typical banana bread recipe up in no time.
Why is it healthy? Quick breads are notorious for being sweet, a great accompliament to brunch or afternoon tea, but now you don’t have to think twice about induging in the luscious slice. Made with carrots, olive oil, spelt flour, ground almonds and ONLY 2 tablespoon of honey, it is really does pack some nutritional punch where other banana breads are purely dessert.

Healthy Banana Carrot Bread
2 Bananas, ripe
2 Medium Carrots, grated
2 Eggs
2 Tbsp Honey
¼ cup Olive Oil
1 tsp Vanilla Extract
2 tsp Ground Cinnamon
1 tsp Ground Ginger
¼ tsp Nutmeg, freshly grated
½ tsp Sea Salt
1 tsp Baking Soda
1 ½ cup Spelt Flour
¼ cup Toasted Almonds, ground
DIRECTIONS
Preheat oven to 190°C or 375°F.
In a food processor, puree the bananas. Add the bananas to a medium mixing bowl in addition to the wet ingredients, grated carrots, eggs, honey, olive oil, and vanilla. Combine thoroughly. Add the dry ingredients to the same bowl, cinnamon, ginger, nutmeg, salt, baking soda, spelt flour, and ground almonds. Stir until completely combined.
Prepare a 8×4 inch bread loaf pan with parchment paper and pour the batter in the pan smoothing out the top.
Bake for 40-45 minutes or until a toothpick inserted into the center of the loaf comes out clean. Serve warm or at room temperature.
