Thai Salmon Patties
Fish and shellfish are nutrient dense and salmon is no exception. It is an excellent source of high-quality protein, vitamins and minerals (including potassium, selenium and vitamin B12) but it is their content of omega-3 fatty acids that deserves mentioning. Important to note omega-3 fatty acids contribute to healthy brain function, to heart and joint, and overall well-being, but it is not synthesized by the body. Omega-3’s are termed essential nutriments because they must be obtained from the diet.
Ingredients
8 oz Salmon
2 tbsp Onnion
¼ cup Red Bell Pepper
1 tsp Fresh Ginger
1 ½ tsp Red Curry Paste
2 tbsp Cilantro
1 Egg
2 tsp Almond Flour
¼ tsp Sea Salt
¼ tsp Black Pepper
1 tsp Olive Oil
Directions
In a food processor puree all of the ingredients except for the olive oil.
Heat a large sauté pan over medium heat. Drizzle 1 tsp olive oil in the pan. Spoon almond patties into the sauté pan, about 2 inches in diameter, creating 4 patties. Cook 2-3 minutes on each side until cooked through. Serve with lemon.
