Sugar Free Nectarine Crumble
It’s summer, and the markets are brimming with seasonal fruits, melon, peaches, cherries, strawberries and nectarines. With this seemingly unending abundance of fresh fruit at our fingertips, I thought I would get creative in the kitchen. This healthy alternative to the classic fruit crumble with vanilla ice cream is tasty and delicious. The added bonus? Food shaming and the guilt trip for eating dessert can hit the highway. This sugar free nectarine crumble is a crowd pleaser, incorporating organic quinoa flakes and old fashion organic oatmeal, it is also a gluten free sensation.
Don’t worry, this recipe won’t take but a minute to prepare. A quick and easy summertime dessert for a Sunday afternoon family barbeque or picnic in the park. If you are craving a bit of indulgence, go ahead and grab a scoop of natural frozen yogurt or vanilla Greek yogurt to wet the tastebuds.
Sugar Free Nectarine Crumble
3-4 Ripe, Medium Nectarines, sliced
2 Tbsp Organic Quinoa Flakes
1/2 tsp Ground Cinnamon
1/4 tsp Ground Ginger
1/4 tsp Freshly Grated Nutmeg
Zest 1 Lemon
1/2 Lemon, juiced
Pinch, Pink Himalayan Sea Salt
Crumble Topping
2 Tbsp Organic Quinoa Flakes
3 Tbsp Organic Gluten Free Old Fashion Oatmeal
2 Tbsp Pumpkin Seeds
1 Tbsp Sunflower Seeds
2-3 Tbsp Walnuts, chopped
1/4 tsp Ground Cinnamon
1/4 tsp Ground Ginger
1/4 tsp Fresh Grated Nutmeg
3 Tbsp Butter
Directions
Preheat the oven to 200°C or 395°F.
In a medium bowl, combine the nectarine, quinoa flakes, cinnamon, ginger, nutmeg, lemon zest, juice and pinch of salt. Stir gently to combine. Pour fruit into a small glass baking dish and bake for 20 minutes.
During this baking time, prepare the crumble. In a small bowl, combine the quinoa flakes, oatmeal, pumpkin seeds, sunflowers seeds, walnuts, cinnamon, ginger, and nutmeg. After the fruit has baked for 20 minutes, remove the dish from the oven and top the fruit mixture with the crumble. Cut small cubes of butter butter and spread evenly over the top. Bake for another 20-25 minutes or until the fruit is bubbling and the crumble is a nice golden brown.
Serve with natural frozen yogurt or a good quality vanilla Greek yogurt. (optional)
