Raspberry Lemonade Cupcakes
Need a sweet for girls night out, or an addition to a baby shower dessert table? These beautiful cupcakes are light & moist and most of all gone because everyone wants one, and one doesn’t suffice. A single batch will easily turn into two so plan accordingly and enjoy!!
Ingredients
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
6 tablespoons unsalted butter, room temperature
2 tablespoons Greek yogurt
2 tablespoons non-fat cream cheese
3/4 cup granulated sugar
zest 1/2 lemon & 1/2 lime
juice 1/2 lemon & 1/2 lime
1 teaspoon vanilla sugar
1 1/2 teaspoon raspberry lemonade drink powder (Crystal Light)
1/2 cup low fat milk
1 cup fresh raspberries
2 tablespoons all-purpose flour
Directions
Preheat the over to 200 degree Celsius. Line a muffin pan with paper liners.
Combine the flour, baking powder, baking soda, and salt in a large mixing bowl. Stir in the butter, Greek yogurt, and cream cheese. Add the sugar and zest of the lemon and the lime. Slowly stir in the liquids, juice of half a lemon and half a lime, vanilla sugar, raspberry lemonade drink powder, and milk. Set aside.
Gently toss the raspberries in the 2 tablespoons of flour. Place 3-4 raspberries in the bottom of each muffin cup. Using a ice cream scoop or a large spoon scoop ladle batter 3/4 full into the muffin cups. Bake for 16-18 minutes or until a toothpick stuck into the center of a cupcake come out clean. Remove from the pan and cool on a wire rack.
Citrus Cream Cheese Butter Cream
2 tablespoons butter, unsalted, room temperature6 ounces low fat cream cheese
zest of 1/2 lemon and 1/2 lime
1/2 teaspoon vanilla sugar
juice of 1/2 lemon
5-6 cups confectioners sugar, depends on how thick you like your frosting
Directions
Cream the cream cheese, butter, zest, and the vanilla sugar together. Squeeze 1/2 lemon into the frosting. One cup at a time mix in the confectioner sugar until the preferred consistency is obtained.
Allow the cupcakes to cool completely before frosting. Garnish with the zest from a lemon and a lime & top with a fresh raspberry.
