Pesto Shrimp
Don’t have a professional kitchen, no problem. Look like an all-star chef with this mouthwatering dish. Sweet shrimp nestled in a fragrant sauce of garlic, onions and pesto. Your nose is your beacon. With the smell wafting through the rooms of the house everyone will be beckoned around the table to discover what awaits. Serve as a starter or a shrimp bruschetta and your friends will become your biggest fans.
1 teaspoon olive oil
1/2 medium onion, chopped
1 clove garlic, minced
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 teaspoon ginger, minced
2 tablespoons pesto, prepared
12 medium shrimp, peeled and de-veined
Salt & pepper, to taste
In a medium size sauté pan heat olive oil over medium high heat. Sauté onions and garlic until tender 1-2 minutes, adding thyme, oregano, ginger and pesto. Place the shrimp into the pan, season with salt and pepper and cook until the shrimp are throughout. The dish will take 5-7 minutes to prepare.
Serve with toasted baguette.
