Healthy Chocolate Muffins

Ingredients
¼ cup Honey
1 1/2 cups Spelt flour
1 teaspoon Flax Meal
1 teaspoon Wheat Germ
1/3 cup Cocoa Powder
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 cup Coffee, cooled to room temperature
1/3 cup Sunflower Oil
2 tablespoon White Wine Vinegar
1 Lemon Zest

Directions
Preheat oven to 350 degrees Fahrenheit or 177 degrees Celsius. Combine the dry ingredients, flour, flax meal, wheat germ, cocoa, baking soda and salt in a large mixing bowl. In a small bowl whisk together honey, coffee, oil, vinegar, and lemon zest. By hand or using an electric mixer slowly pour and begin to stir the liquid into the bowl with the dry ingredients until thoroughly combined.
Spoon into prepared muffin pans lined with paper cups. Fill 2/3rd full. Sprinkle with seeds. Bake for 10-12 minutes, until cooked through. Use a toothpick. Insert it into the cupcake and make sure it comes out clean.
