Healthy Chocolate Muffins

High fiber and low in sugar, enjoy these gorgeous muffins for breakfast or a snack in the afternoon. A snap to prepare, you can be enjoying a sweet treat in 30 minutes or less. A great go-to recipe for brunch or a house warming gift for your neighbors. The joy of baking is always better shared.

Mocha cupcakes with spelt flour, flax meal and wheat germ. Healthy and delicious!

Ingredients

¼ cup Honey

1 1/2 cups Spelt flour

1 teaspoon Flax Meal

1 teaspoon Wheat Germ

1/3 cup Cocoa Powder

1 teaspoon Baking Soda

1/2 teaspoon Salt

1 cup Coffee, cooled to room temperature

1/3 cup Sunflower Oil

2 tablespoon White Wine Vinegar

1 Lemon Zest

Mixed Seeds

Directions

Preheat oven to 350 degrees Fahrenheit or 177 degrees Celsius. Combine the dry ingredients, flour, flax meal, wheat germ, cocoa, baking soda and salt in a large mixing bowl. In a small bowl whisk together honey, coffee, oil, vinegar, and lemon zest. By hand or using an electric mixer slowly pour and begin to stir the liquid into the bowl with the dry ingredients until thoroughly combined.

Spoon into prepared muffin pans lined with paper cups. Fill 2/3rd full. Sprinkle with seeds. Bake for 10-12 minutes, until cooked through. Use a toothpick. Insert it into the cupcake and make sure it comes out clean.Simple to make. Prep and bake these healthy mocha muffins for your next brunch celebration.
