Apple, Walnut & Arugula Salad with Oriental Mustard Vinaigrette
A healthy salad that packs tons of flavor. I love the combination of sweet and savory. The peppery greens and robust taste offered by the bleu cheese is contrasted by the sweet apple. Not to mention, the dressing is homemade, incorporating the healing powers of turmeric, make this starter a mainstay in your diet. The ingredients are accessible and the dressing can be made in larger quantities, making this an on-the-go favorite. I love buckwheat, but you have another favorite ancient grain like bulgur or millet, change it up. Have fun creating other variations or adding protein like grilled chicken or shredded turkey to main it an entree. Eating healthy tastes pretty damn good!
Oriental Mustard Vinaigrette
1/3 cup Olive Oil
2 Tbsp Dijon Mustard
½ Lemon, juiced
1 tsp Honey
¼ tsp Turmeric
¼ tsp Yellow London Curry
Pinch Pink Himalayan Sea Salt
Pinch White Pepper
Directions
Use a small mason jar to combine all ingredients. Seal the jar closed and shake to combine. Serve.
Apple Walnut Arugula Salad
4 cups Fresh Arugula Greens
¼ medium Red Onion, sliced thin, lengthwise
1 Royal Gala Apple (or Pink Lady), julienned
1 cup Walnuts, toasted and chopped
1 cup Buckwheat, prepared
4 oz Bleu Cheese, crumbled
Pinch Pink Himalayan Sea Salt
Pinch White Pepper
DIRECTIONS
In a large mixing bowl, combine all the ingredients. Pour half to two-thirds of the dressing over the salad. Toss gently to mix and cover the ingredients thoroughly. Using tongs serve the salad. You can use extra whole walnuts and additional bleu cheese crumbles to garnish.
